Hello again everyone!
We’re already two months in to the 2010 SPAM® Cook of the Year competition, and it looks like you’ve all been extremely busy in the kitchen, as the entries have started to pour in and I’ve been pleasantly surprised to see how many talented budding chefs are out there! So many of you have come up with excellent, imaginative recipes – the first being the scrumptious SPAM® Spinach and Mushroom Filo Pastry creation.
The Southern regions are currently submitting the most entries by far though, so come on all you Northerners, don’t let your side down! With spring on its way there’s no excuse for any of you to not use the extra daylight to get inventive in the kitchen!
Remember, for a chance to win some great prizes, you have until the 31st August to upload your creations, together with a picture, via the website – www.spam-uk.com. To be in with the best chance of winning, a tip is to submit your recipes sooner rather than later so the public can start deciding on their favourites before September’s big public vote. It’ll be here before you know it!
I love seeing all of your recipes and we’re going to be adding a special image gallery to the website soon to showcase them all – so please keep them coming in. I want to see even more unique recipes – the more unusual the better!

it’s a classic from Hong Kong – fry slices of Spam in soy sauce until crispy and caramalised. Then serve on a bed of chinese stir fry vegetables, and potentially a fried egg on top!
