Basil and SPAM®ato Sauce

Ingredients
- Preparation time 10 minutes Cooking time 30-45mins
- 1 can SPAM, chopped into cubes
- 1 tbsp olive oil
- 1 onion, chopped
- 1 tbsp garlic puree
- 1 400g tin chopped tomatoes
- 1 tsp sugar
- 2 tsp basil
- Salt and pepper to taste
Method
- Heat oil in large pan, add onion and fry until soft.
- Add garlic and stir for another minute.
- Add tomatoes and stir in basil and sugar.
- Sprinkle salt and pepper then bring to the boil.
- Once boiled, cover and simer gently for 30-45 minutes stirring occasionally until sauce is thick
- Puree the sauce in a blender until smooth
- Add SPAM to sauce and serve over pasta or noodles
