Creamy SPAM® Chopped Pork and <br />Ham & Broccoli Pasta

Ingredients

  • 1 x 340g Can SPAM® Chopped Pork and Ham, cut into sticks
  • 225g/8oz Penne pasta
  • 225g/8oz Broccoli florets
  • 50g/2oz Butter
  • 3 Medium leeks, sliced
  • 60ml/4tbsp Plain flour
  • 600ml/1pt Milk
  • 5ml/1tsp English mustard
  • 2.5ml/1/2tsp Grated nutmeg (optional)
  • 100g/4oz Cheddar cheese, grated

Method

  1. Bring a large pan of salted water to the boil. Add the pasta and cook for 5 minutes. Stir in the broccoli florets, return to the boil and cook for a further 5 minutes or until both the pasta and broccoli are tender. Drain and set aside.
  2. Meanwhile, melt the butter in a medium pan, add the leeks and cook for 3-4 minutes, stirring occasionally until the leeks are soft. Stir in the flour and cook for 1 minute.
  3. Gradually add the milk to the pan, stirring well between additions. Bring to the boil, stirring until the sauce boils and thickens. Cook for 1 minute, then stir in the mustard, nutmeg (if using), the cheese and SPAM®.
  4. Stir the drained pasta and broccoli into the sauce, toss well to mix and season to taste. Serve immediately.
