Jamaican Jerk SPAM® with Rice and <br/>Peas

Serves 1

Ingredients

  • 1 Tin Spam - chopped
  • 4 Scotch bonnet peppers
  • 2 Tbsp. Thyme
  • 2 Tbsp. Ground allspice
  • 8 Cloves Garlic, finely chopped
  • 3 Medium Onions, finely chopped
  • 2 Tbsp. Sugar
  • 2 Tbsp. Salt
  • 2 Tsp. Ground black pepper
  • 1 Tsp. Ground cinnamon
  • 1 Tsp. Nutmeg
  • I Tsp. Ginger
  • 50ml Olive oil
  • 50ml Soy sauce
  • Juice Lime
  • 50ml Orange juice
  • 50ml White vinegar
  • 200g Basmati Rice
  • 100g Kidney Beans
  • 1 tin Coconut milk
  • 1tsp. Tomato Puree

Method

  1. Chop the onions, garlic and peppers.Blend all of the ingredients in a blender to make the jerk sauce.
  2. Rub the sauce in to the spam, saving some for basting and dipping later.
  3. Leave the spam in the fridge to marinade overnight.
  4. To make the rice, wash it and put in a large saucepan.
  5. Add the kidney beans, coconut milk, tomato puree, a touch of thyme and chilli.
  6. Cook for 30minutes until soft.
  7. Pan fry or grill the spam and add to rice. Serve
