Jamaican Jerk SPAM® with Rice and
Peas

Ingredients
- 1 Tin Spam - chopped
- 4 Scotch bonnet peppers
- 2 Tbsp. Thyme
- 2 Tbsp. Ground allspice
- 8 Cloves Garlic, finely chopped
- 3 Medium Onions, finely chopped
- 2 Tbsp. Sugar
- 2 Tbsp. Salt
- 2 Tsp. Ground black pepper
- 1 Tsp. Ground cinnamon
- 1 Tsp. Nutmeg
- I Tsp. Ginger
- 50ml Olive oil
- 50ml Soy sauce
- Juice Lime
- 50ml Orange juice
- 50ml White vinegar
- 200g Basmati Rice
- 100g Kidney Beans
- 1 tin Coconut milk
- 1tsp. Tomato Puree
Method
- Chop the onions, garlic and peppers.Blend all of the ingredients in a blender to make the jerk sauce.
- Rub the sauce in to the spam, saving some for basting and dipping later.
- Leave the spam in the fridge to marinade overnight.
- To make the rice, wash it and put in a large saucepan.
- Add the kidney beans, coconut milk, tomato puree, a touch of thyme and chilli.
- Cook for 30minutes until soft.
- Pan fry or grill the spam and add to rice. Serve
