Mexican Extravaganza
Taste a bit of Mexico with this fabulous SPAM® Mexican Extravaganza!
Ingredients
- 100g pasta
- 1 (340g) can SPAM® Chopped Pork and Ham, cut in cubes
- 1 (425g) can pinto beans, drained
- Grated cheddar cheese
- 100g sweetcorn (can or frozen)
- 1 green pepper, chopped
- 1 chopped onion
- 3 chopped tomato
- 65g sliced ripe olives, drained
- 1 (226g) jar salsa
- 12 tbsp sour cream
- 1 tablespoon mayonnaise or salad dressing
- 4 cups shredded lettuce
- Tortilla chips
Method
- Cook pasta according to package directions; chill.
- In frying pan, cook SPAM® until golden brown; cool.
- In large bowl, combine pasta, SPAM®, pinto beans, cheese, corn, pepper, onion, tomato, and olives.
- In small bowl, combine salsa, sour cream, and mayonnaise.
- Toss together salsa mixture and SPAM mixture.
- Cover and chill several hours. Spoon salad mixture over lettuce.
- Serve with tortilla chips.
