Pan-Fried Scallops with Asparagus
and SPAM® - Kirsteen Black
Ingredients
- 16-20 Asparagus spears
- 1 tbsp Olive Oil
- 340g can SPAM® Chopped Pork and Ham
- 12 Scallops, out of their shells
- 6 tbsp Sour Cream
- 1 tsp Butter
- Salt and Pepper
Method
- Steam the asparagus for ten minutes
- Meanwhile, warm the olive oil in a large frying pan over a medium heat
- Add the SPAM® to the pan and fry for 5 to 10 minutes on both sides, until it becomes crisp, like bacon and keep to the side
- Season the scallops with salt and pepper
- Fry the scallops in the hot pan over a high heat for 1-2 minutes, until golden brown
- Turn and repeat the same cooking time on the other side
- Spoon the sour cream onto a serving plate and brush the asparagus spears with butter, before laying them on top
- Arrange the asparagus and top with the fried SPAM®
