Pan-Fried Scallops with Asparagus <br />and SPAM® - Kirsteen Black

Ingredients

  • 16-20 Asparagus spears
  • 1 tbsp Olive Oil
  • 340g can SPAM® Chopped Pork and Ham
  • 12 Scallops, out of their shells
  • 6 tbsp Sour Cream
  • 1 tsp Butter
  • Salt and Pepper

Method

  1. Steam the asparagus for ten minutes
  2. Meanwhile, warm the olive oil in a large frying pan over a medium heat
  3. Add the SPAM® to the pan and fry for 5 to 10 minutes on both sides, until it becomes crisp, like bacon and keep to the side
  4. Season the scallops with salt and pepper
  5. Fry the scallops in the hot pan over a high heat for 1-2 minutes, until golden brown
  6. Turn and repeat the same cooking time on the other side
  7. Spoon the sour cream onto a serving plate and brush the asparagus spears with butter, before laying them on top
  8. Arrange the asparagus and top with the fried SPAM®
