SPAM® and 2 Cheese Basil Tartlet

Serves 1

Ingredients

  • 100g Spam chopped pork and ham (finely diced)
  • 30g goat's cheese
  • 30g matured cheddar cheese (grated)
  • A handful basil leaves (roughly chopped)
  • 4-5 spring onions (sliced)
  • 1 teaspoon cooking oil
  • 75ml milk
  • 1 tablespoon cream
  • 1 large free range egg (beaten)
  • pepper for seasoning
  • 120g plain flour
  • 30g lard
  • 30g margarine
  • 1 pinch of salt

Method

  1. Put flour, lard and margarine in a food processor and blitz until the mixture resemble fine breadcrumbs.
  2. Add in cold water till the mixture form a soft dough.
  3. Cover and leave the dough in the fridge for 10 minutes.
  4. Beat the egg, milk and cream together in a large bowl. Add in the diced Spam and the crumbled goat's cheese. Add a dash of pepper
  5. Heat the oil in a frying pan. Soften the onions and wilt the basil. Leave to cool
  6. Roll out the pastry, line four 10cm loose base fluted tartlet tins. Divide the herbs between the 4 pastry cases. Add in the egg and Spam mixture. Sprinkle with grated cheddar cheese.
  7. Bake in a middle of the oven 190c/375F/ Gas 5 for 20 minutes until the top is golden brown. Remove from the oven and leave to cool.
  8. Serve warm with freshly dressed green leaves salad and pickled cucumber relish as a starter.
