SPAM® Chopped Pork and Ham
and Potato Cakes
Serves 4
Ingredients
- 1 x 340g can SPAM® Chopped Pork and Ham finely cubed
- 60ml/4tbsp Vegetable oil
- 2 Medium leeks, sliced
- 675g 1 1/2lb Mashed potatoes
- 60ml/4tbsp Sweet pickle
- 2 tbsp Plain flour
- Salt and ground black pepper
- 2 Medium eggs, beaten
- 100g/4oz Dried breadcrumbs
Method
- Heat 1 tbsp of the oil in a small pan, add the leeks and cook for 1 minute or until soft. Place the mashed potato in a large bowl, stir in the leeks, SPAM®, sweet pickle and 1 egg. Season to taste with pepper.
- Divide the mixture into eight, then use wet hands to shape each piece into a round cake. Place the flour, egg and breadcrumbs on 3 separate plates. Dip each cake first into flour, then egg and finally the crumbs, turning until evenly coated with each.
- Heat the remaining oil in a large frying pan, add the cakes and cook over a medium heat for 10 minutes, turning over once until golden brown on both sides. Serve hot with salad or vegetables.
- Cook's Tip - We've used cold mashed potato for speed in this recipe. But if you're starting from scratch you'll need about 900g/2lb unpeeled potatoes, which once peeled and cooked will give you the right amount of mash for this recipe.
