SPAM® Croquettes

Ingredients
- 1 egg beaten
- 2 slices bread grated into breadcrumbs
- 4 cheese slices
- 50 g flour
- 1 tin Mushy Peas
- 1 tap Mint Sauce
Method
- Open the Spam and with an apple corer extract four croquettes.
- Take a slice of cheese and wrap around the Spam,then coat with flour.
- Dip in the beaten egg then transfer to the breadcrumbs and coat
- Leave for a few minutes and coat again in egg and breadcrumbs.
- Deep fry for a few minutes until golden brown.
- Drain a tin of mushy peas and blend with a teaspoon of mint to form a purée.
- Arrange on a plate with a sprig of mint
