SPAM® Galettes
Serves 1
Ingredients
- 500g desiree potatoes, thinly sliced
- 50g butter, melted
- Salt and pepper
- 1 cup gruyere cheese, grated
- 250g Spam Chopped
- 1 garlic clove, thinly sliced
- 1 tablespoon flat-leaf parsley, chopped
- Lemon Grass
- 1 chilli, sliced
- Baby rocket, to garnish
Method
- Grease and line the bottom of 4 x 10cm round cake tins
- Boil the potatoes and drain fully.
- Mash and mix with the gruyere, salt and pepper, spam and garlic.
- Pan fry the spam and add to the potato.
- Put half the potato in the tin and top with the rest of the cheese, lemon grass, chilli and parsley.
- Repeat another layer of potato.
- Bake in oven for 40 minutes or until potatoes are crisp and golden.
- Serve galettes topped with baby rocket.
