SPAM® Hash
Serves 2
Ingredients
- 1 x 340g tin of SPAM
- 1lb 8oz charlotte potatoes
- 2 x medium white onions
- 1 x small red chili
- 2 x spring onions
- 2 x level tbsp fresh parsley
- 3 x tbsp vegetable oil for hash, plus enough to fry an egg in.
- 3 x tsp Worcester Sauce
- 2 x medium eggs
- black pepper (to season)
Method
- Wash potatoes, cook until tender, drain and cool. Cut into 1 inch chunks
- Open tin of SPAM®, cut into cubes
- Peel onions and cut into small cubes
- Core and de-seed chili - finely dice
- Put 1 x tbsp pil into a large frying pan, heat and add onion and chili. Cook gently for 15 minutes, stirring occasionally.
- Scoop out mixture and place into a large bowl. Add SPAM®, potatoes, Worcester Sauce and season with black pepper.
- Add the rest of the pil to the frying pan, heat and add in mixture along with spring onions. Stir until looks golden and slightly crispy - add in parsley and stir once more.
- Fry the eggs, spoon out hash onto two plates and place an egg on top of each - ENJOY!
