SPAM® Muffins
Serves 6
Ingredients
- 10g butter
- 1/2 red onion finely chopped
- 200g plain flour
- 1/4 tsp salt
- 1tsp English mustard powder
- 1 tbsp baking powder
- 100g red Leicester cheese, grated
- 125 ml milk
- 1 egg
- 1 tbsp crème fraîche
- 120g Spam chopped into chunks (reserving a quarter to sprinkle on top)
Method
- Grease or line with muffin cases a 6 whole muffin tray
- Fry the onion in the butter until soft and allow to cool.
- Sift all the dry ingredients in a bowl along with the cheese.
- In a jug lightly beat the egg and milk and add the crème fraîche.
- Add the milk mixture to the dry ingredients, working swiftly so as not to overmix, finally fold in the onion and three quarters of the Spam.
- Fill six muffin cases with the mixture and add a quarter of the Spam on top to decorate.
- Place in the oven for 20-25 minutes until risen and golden brown.
