SPAM™ Potato Gratin
Ingredients
- 1 x 340g Can SPAM®, Chopped Pork and Ham, cut into sticks
- 675g/11/2lb New potatoes, scrubbed
- 450ml/3/4pt Milk
- 50g/2oz Butter
- 45ml/3tbsp Plain flour
- 1 Bunch spring onions, trimmed and sliced
- 225g/8oz Cherry tomatoes, halved
- 100g/4oz Cheddar cheese, grated
- Salt and freshly ground black pepper
Method
- Cut the potatoes into halves if they are large. Place in a pan, cover with cold, salted water and bring to the boil. Cover the pan and boil for 10-15 minutes or until tender. Drain the potatoes, return to the pan and keep warm.
- Meanwhile, place the milk, butter and flour in a medium pan and gently heat, whisking frequently with a balloon whisk until the mixture boils and thickens. Stir in the spring onions, tomatoes and half the cheese and cook over a low heat for 1 minute.
- Pour the sauce over the potatoes, add the SPAM® and toss to mix. Spoon into shallow gratin dish and sprinkle over the remaining cheese. Cook under a hot grill for 5 minutes or until golden brown and crisp on top. Serve hot.
