SPAM® Risotto with Peas
and Parmesan
Serves 4
Ingredients
- 1 x 340g tin spam, diced
- 300g risotto rice
- 1 x large onion, chopped
- cupful of frozen peas
- 1l vegetable stock
- thyme & marjoram
- olive oil
- grated parmesan to serve
Method
- Stir the herbs into the hot stock and leave to steep.
- Add the olive oil and onions to a cold pan and heat until they begin to sizzle, stirring occasionally.
- Once the onions have begun to go transparent, add the rice and stir until well coated and grains begin to go transparent round the edges.
- Then add the diced spam and turn over a few times to warm through.
- Add the first ladleful of stock and then add the frozen peas. Stir well.
- Once the stock has come to the boil, turn the heat right down and cover.
- As each ladleful of stock is absorbed, add another, until all the stock is absorbed.
- Take off the heat, stir in the parmesan and serve.
