SPAM® and Spring Onion Balls
with Broccoli Mousse

Ingredients
- 1 Tin of spam
- Brocoli
- Double cream
- Gelatine
- Lemon juice
- Butter
- Spring onions
- Breadcrumbs
- Chopped hazelnuts
- Egg white
- Seasoning
- Sugar
- Parsley (To decorate)
- A very small baguette.
Method
- For the Broccoli Mousse: Cut the brocoli into florets and cook in boiling water until tender
- Soak the gelatine leaves in cold water.
- Drain the brocoli and place in a blender with season and a little lemon juice.
- Once pureéd, push through a sieve and add the soaked gelatine leaves.
- Whip the double cream until it just begins to hold and fold this into the brocoli.
- Fold in some finely diced spam, check the seasoning and place into glasses.
- with the rest of the cream, add a little lemon juice and seasoning and pipe on top of the mousse.
- Melt the sugar with a little water until it just starts to turn light golden brown, add finely chopped parsley and spread onto a sheet of greaseeproof paper, once set, break into shards and place into the mousse with a small piece of parsley.
- For the spam and spring onion balls: Cut the spam into a very small dice.
- Finely chop the spring onions.
- Mix these with the butter then form into round balls.
- Roll these through egg white and then through the breadcrumbs mixed with the fine hazelnuts.
- Deep fry until golden brown, drain on paper and serve straight away.
- A small loaf or baguette can be sliced very thinly and toasted to serve with the dish.
