SPAM® and Spring Onion Balls <br/>with Broccoli Mousse

Serves 1

Ingredients

  • 1 Tin of spam
  • Brocoli
  • Double cream
  • Gelatine
  • Lemon juice
  • Butter
  • Spring onions
  • Breadcrumbs
  • Chopped hazelnuts
  • Egg white
  • Seasoning
  • Sugar
  • Parsley (To decorate)
  • A very small baguette.

Method

  1. For the Broccoli Mousse: Cut the brocoli into florets and cook in boiling water until tender
  2. Soak the gelatine leaves in cold water.
  3. Drain the brocoli and place in a blender with season and a little lemon juice.
  4. Once pureéd, push through a sieve and add the soaked gelatine leaves.
  5. Whip the double cream until it just begins to hold and fold this into the brocoli.
  6. Fold in some finely diced spam, check the seasoning and place into glasses.
  7. with the rest of the cream, add a little lemon juice and seasoning and pipe on top of the mousse.
  8. Melt the sugar with a little water until it just starts to turn light golden brown, add finely chopped parsley and spread onto a sheet of greaseeproof paper, once set, break into shards and place into the mousse with a small piece of parsley.
  9. For the spam and spring onion balls: Cut the spam into a very small dice.
  10. Finely chop the spring onions.
  11. Mix these with the butter then form into round balls.
  12. Roll these through egg white and then through the breadcrumbs mixed with the fine hazelnuts.
  13. Deep fry until golden brown, drain on paper and serve straight away.
  14. A small loaf or baguette can be sliced very thinly and toasted to serve with the dish.
