SPAM® Stuffed Peppers

Ingredients

  • 1 x 340g Can SPAM® Chopped Pork and Ham finely chopped
  • 4 Red green or yellow peppers or a mixture
  • 30ml/2tbsp Vegetable oil
  • 150g/5oz Mushrooms, sliced
  • 6 Spring onions, trimmed and sliced
  • 1 x 278g Can cooked long grain rice
  • 45ml/3tbsp Snipped fresh basil (optional)
  • Salt and ground black pepper
  • 50g/2oz Cheddar cheese, grated

Method

  1. Bring a large pan of water to the boil. Use a knife to carefully cut the peppers in half down the centre of the stalks. Cut away the seeds and discard, leaving stalks attached. Add the peppers to the boiling water, cover and simmer for 10 minutes or until tender. Drain and set aside
  2. Meanwhile, heat the oil in a frying pan, add the mushrooms and cook for 4 minutes stirring until softened. Stir in the onions, SPAM®, rice, basil (if using) and salt and pepper to taste. Cook for 2 minutes or until hot.
  3. Drain the peppers in a colander and place cut side up in a heatproof dish. Divide the rice mixture between the peppers and scatter over the cheese. Cook under a hot grill for 4 minutes or until the cheese is melted and golden. Serve hot or cold with salad.
