SPAM™ Sweet and Sour
Serves 4
Ingredients
- 1 x 340g Can SPAM® Chopped Pork and Ham cut into sticks
- 30ml/2tbsp Vegetable oil
- 2 Carrots, peeled and sliced into sticks
- 1 Red pepper, deseeded and sliced
- 100g/4oz Baby corn, halved lengthways
- 1 (432g) Can pineapple chunks in natural juice
- 15ml15ml/1tbsp Clear honey
- 15ml15ml/1tbsp White wine vinegar
- 15ml15ml/1tbsp Soy sauce
- 15ml15ml/1tbsp Cornflour
- 1 Bunch spring onions, trimmed and sliced
- 1 Garlic clove, crushed
- 2.5cm/1in Piece root ginger, peeled and chopped
Method
- Heat the oil in large wok or frying pan, add the SPAM®, carrots, pepper and corn and stir fry for 4 minutes. Meanwhile, drain the juice from the pineapple and mix with 100ml/4floz water, the tomato puree, honey, vinegar and soy. Mix the cornflour to a smooth paste with a little cold water. Set aside.
- Add onions, garlic and ginger to the wok and stir fry for 1 minute. Add the pineapple cubes, juices and cornflour to the wok and bring to the boil. Cook for 1 minute, stirring until thickened. Serve immediately with noodles
