SPAMBALAYA® - Phil Schofield
Ingredients
- 340g SPAM® with Garlic
- 2 Chicken Breasts (diced)
- 150g cooked and peeled prawns
- 2 Stick celery, chopped
- 2 Chopped Bell Peppers
- 2 Chopped Red Onions
- 150g Long grain rice
- 1 Pint Chicken Stock
- Cayenne Pepper
- Cooking oil
Method
- Over a medium heat fry the SPAM® and Chicken in a little oil until they brown
- Add celery, peppers and onion and continue to fry for two minutes
- Stir in the rice and cayenne pepper (to taste)
- Add the stock, (plus extra water, if required to just cover ingredients)
- Increase heat and boil for ten minutes, then cover frying pan and turn off heat
- Allow about 10 minutes for most of the liquid to be absorbed then stir in the prawns.
- Recover for 1 minute and then serve
