SPAMBALAYA® - Phil Schofield

Ingredients

  • 340g SPAM® with Garlic
  • 2 Chicken Breasts (diced)
  • 150g cooked and peeled prawns
  • 2 Stick celery, chopped
  • 2 Chopped Bell Peppers
  • 2 Chopped Red Onions
  • 150g Long grain rice
  • 1 Pint Chicken Stock
  • Cayenne Pepper
  • Cooking oil

Method

  1. Over a medium heat fry the SPAM® and Chicken in a little oil until they brown
  2. Add celery, peppers and onion and continue to fry for two minutes
  3. Stir in the rice and cayenne pepper (to taste)
  4. Add the stock, (plus extra water, if required to just cover ingredients)
  5. Increase heat and boil for ten minutes, then cover frying pan and turn off heat
  6. Allow about 10 minutes for most of the liquid to be absorbed then stir in the prawns.
  7. Recover for 1 minute and then serve
