SPAMOUSSE Duchess Nest
served with melba toast
Serves 4
Ingredients
- 1 x 340g tin of SPAM®
- 4 x Medium everyday potatoes
- 1/2 Shallot
- 1/2 Garlic clove
- 2 x Egg yolks
- 1 x Nutmeg
- 200ml Double Cream
- Fresh Parsley
- Salt and Pepper
- Cooking Oil
- Butter
- Bread
Method
- slice a 2cm slice of spam lenthways and use a cutter to cut a circle from it. This will be the fritter base.
- Gently fry this spam circle in a little oil till lightly coloured.
- Chop the rest of the spam and place in a food processor, finely chop some parsley the half shallot and garlic clove and add to the mix, add a little cream and blend till it is a smooth pate' consistency. season accordingly.
- Boil the potatoes and mash them, adding cream,butter,egg yolks,seasoning and grated nutmeg. push this through a sieve to rid any lumps.
- Toast the bread, slice in half along the length of the bread, making an ultra thin slice, then re-toast this, cut it in half.
- Using a star nozzel and a piping bag, pipe the potato following the edges of the fritter base, building it up a few layers is a 'nest' shape. Using the same nozzle and a fresh piping bag pipe the filling into the nest using a circular motion and finish with a sprig of parsley, lean the melba toast decorativly at the side for dipping/spreading. This dish can be served with a hot or cold nest.
- The best thing is, any leftover mousse mix i have, i cling film in the fridge and use for spreading on toast the next morning - yum!
