Spicy SPAM™ Rigatoni
Serves 4
Ingredients
- 1 x 340g Can SPAM®, Chopped Pork and Ham, cubed
- 45ml/3tbsp Olive oil
- 1 Onion, chopped
- 1 Garlic clove, crushed
- 10ml/2tsp Ground cumin
- 2.5ml/1/2tsp Chilli powder
- 1 x 396g Can chopped tomatoes
- 30ml/2tbsp Tomato puree
- pinch of caster sugar
- 225g/8oz Rigatoni pasta
- 1 x 420g Can chick peas, drained
- 2 Courgettes, sliced
- Salt and freshly ground black pepper
Method
- Heat the oil in a large pan add the onion and cook for 2 minutes, stirring occasionally, until soft. Add the garlic and spices and cook for 1 minute. Add the tomatoes, puree, sugar and bring to the boil. Simmer over a high heat for 8 minutes, stirring occasionally until reduced and thickened.
- Meanwhile, bring a large pan of salted water to the boil, add the rigatoni then simmer uncovered for 8-10 minutes, or according to packet instructions, until tender. Drain and keep warm.
- Stir the SPAM®, chick peas and courgettes into the sauce, cover and simmer for a further 6-8 minutes or until the courgettes are tender. Add the pasta to the sauce, stirring until coated. Delicious served hot with Parmesan cheese.
