Tomato & SPAM® Chopped Pork
and Ham Flan
Serves 4
Ingredients
- 1 x 340g Can SPAM®, Chopped Pork and Ham, cubed
- 2 tbsp Olive oil
- 2 Large onions, sliced
- 1 Garlic clove, crushed
- 1 x 800g Can tomatoes, drained
- 30ml/2tbsp Green Pesto sauce (optional)
- 1 Medium egg, beaten
- 30ml/2tbsp Milk
- 8-10 Black olives, (optional)
- 300g Ready rolled shortcrust pastry
Method
- Heat the oil in a large pan, add the onion and garlic and cook for 2 minutes, stirring occasionally until soft. Add the tomatoes to the pan, breaking them up with a wooden spoon. Bring to the boil and simmer over a high heat for 5 minutes or until reduced and thickened. Season and leave to cool.
- Preheat the oven to 220C/425F/Gas Mark 7. Stir the SPAM®, pesto sauce (if using) and egg into the cool tomato mixture. Unfold the pastry and cut out a rough 25cm/10in circle, slide it onto a baking sheet.
- Brush the edges of the pastry with milk, then spoon the filling onto the centre leaving a 4cm clear border. Gather the pastry edges together and bring them up around the filling, pinching them together slightly, to form a rough tart shape. Bake at the top of the oven for 20 minutes or until golden brown. Serve hot, warm, or cold with salad leaves.
- Cook's Tip You can buy ready rolled short crust pastry, both fresh and frozen, from large supermarkets - all it needs is trimming to size. If you can't find it, roll out an equal weight of readymade short crust pastry instead, it needs to be about 5mm (1/4in thick).
