Tomato & SPAM® Chopped Pork <br />and Ham Flan

Ingredients

  • 1 x 340g Can SPAM®, Chopped Pork and Ham, cubed
  • 2 tbsp Olive oil
  • 2 Large onions, sliced
  • 1 Garlic clove, crushed
  • 1 x 800g Can tomatoes, drained
  • 30ml/2tbsp Green Pesto sauce (optional)
  • 1 Medium egg, beaten
  • 30ml/2tbsp Milk
  • 8-10 Black olives, (optional)
  • 300g Ready rolled shortcrust pastry

Method

  1. Heat the oil in a large pan, add the onion and garlic and cook for 2 minutes, stirring occasionally until soft. Add the tomatoes to the pan, breaking them up with a wooden spoon. Bring to the boil and simmer over a high heat for 5 minutes or until reduced and thickened. Season and leave to cool.
  2. Preheat the oven to 220C/425F/Gas Mark 7. Stir the SPAM®, pesto sauce (if using) and egg into the cool tomato mixture. Unfold the pastry and cut out a rough 25cm/10in circle, slide it onto a baking sheet.
  3. Brush the edges of the pastry with milk, then spoon the filling onto the centre leaving a 4cm clear border. Gather the pastry edges together and bring them up around the filling, pinching them together slightly, to form a rough tart shape. Bake at the top of the oven for 20 minutes or until golden brown. Serve hot, warm, or cold with salad leaves.
  4. Cook's Tip You can buy ready rolled short crust pastry, both fresh and frozen, from large supermarkets - all it needs is trimming to size. If you can't find it, roll out an equal weight of readymade short crust pastry instead, it needs to be about 5mm (1/4in thick).
