SPAM® Breakfast Rarebit

Ingredients

  • 1 x 340g can of SPAM® Chopped Pork and Ham - cut into 1/2” cubes
  • 4 tbsp of Henderson’s Relish
  • 175g Wensleydale or Swaledale cheese - grated
  • 25g butter
  • 25g plain flour
  • 150ml milk
  • 1 large egg yolk
  • 1 rounded teaspoon English mustard powder
  • 4 x slices of thick cut wholemeal or granary bread

Directions

  1. Toast 4 slices of bread and keep warm.
  2. Melt the butter in a medium size saucepan and add the flour, stirring well for two minutes.
  3. Gradually stir in the milk, beating well until a thick mixture is formed. Then stir in 150g of grated cheese, mustard powder and Henderson’s Relish.
  4. Stir in the egg yolk, return to the heat and cook, stirring for a further 30 seconds.
  5. On each slice of toast spread quarter of the cheese mixture, taking the mixture right to the edges of each slice.
  6. Top each slice of toast with ¼ of the cubed SPAM® Chopped Pork and Ham.
  7. Divide the remaining grated cheese and sprinkle on each slice.
  8. Lay the Rarebits on a baking sheet and cook under a high grill until the cheese is bubbling and the SPAM® Chopped Pork and Ham is golden and crisp.
  9. Add an extra splash of Henderson’s Relish and enjoy!
