SPAM^® Eggs Benedict with Mock Hollandaise Sauce

Ingredients

• Half a 340g can of SPAM^® Chopped Pork and Ham (or 1x200g tub), cut into thick slices
• 2 fresh organic eggs
• 2 English muffins
• A little butter - optional
• A little freshly chopped parsley

Directions

1. For the Mock Hollandaise sauce
2. (NB: This sauce is cold but can be warmed through in a small pan or in the microwave for a few seconds. Alternatively, a packet mix can be used.)
3. 8 tbsp (115g) light mayonnaise
4. Half tsp English mustard
5. 2 tsp lemon juice
6. A little milk
7. Salt and freshly ground black pepper
