1 x 200g can or tub of SPAM® Chopped Pork and Ham cut into cubes
250g/10 oz couscous
300ml/10 fl oz boiling water
Half a chicken stock cube
50g/2 oz frozen peas
25g/1oz pine nuts – toasted
8/10 cherry tomatoes – halved or quartered
¼ cucumber – semi peeled and diced
1 medium red onion
2 tbsp freshly chopped parsley
25g/1 oz melted butter
Olive oil or basil oil for drizzling
A handful of salad leaves to serve / salt and black pepper
Place a chicken stock cube into a measuring jug and pour on 1300ml/10fl oz of boiling water, stir well until the cube is dissolved.
Place the couscous into a bowl and gently pour over the chicken stock, stir well, cover and leave to stand for minutes.
Separate the grains with a fork and pour on the melted butter and stir well, leave aside to become cold.
Pour boiling water on the peas to defrost, drain and allow to cool.
Peel and finely dice half of the red onion and finely slice the other half, leave aside.
Put the couscous, peas, pine nuts, tomatoes, cucumber and the finely diced red onion, together with the finely chopped parsley, into a mixing bowl and gently combine together. Add the cubed SPAM®. Chopped Pork and Ham, season and drizzle with olive/basil oil, stir again, transfer into a serving bowl.
Garnish with the finely sliced red onions and the salad leaves to serve.
